Preheat the oven to 350 degrees F. In a large skillet over medium-high heat, add 1 lb of ground beef, then break it down. While the ground beef is cooking, add the chopped yellow onion. Cook it until the meat is no longer pink and the onion softened up. After this, push the meat to the side of the pan and drain out some of the greases. Next, add 1 packet of taco seasoning, and 1/4 cup of beef broth (or water). Mix it well. Let it simmer on medium-high heat for 5 minutes. After this, add 2 cans of Rotel tomatoes, and 1 14.5 oz of canned corn. Combine the ingredients by mixing them. Lower the heat and let it sit on the burner.

In a medium bowl, add 3 cups of Bisquick mix. Next, add 1 cup of water. Mix it until it becomes a dough. After this, spray the bottom of the baking dish. Take the dough and spread it evenly onto the baking dish. Next, place the meat on top of the biscuit mixture nicely.
In a medium bowl, add 8 oz of softened cream cheese, 1/2 cup of mayonnaise, 1/4 tsp garlic powder, 1/4 tsp onion powder, and 1/8 tsp salt. Using an electric hand mixer, blend the mixture in the bowl. When the consistency becomes smooth, dollop it over the casserole. Smooth it out carefully. Sprinkle some cheddar cheese over the top. Place the casserole in the preheated oven for about 30-35 minutes. After 35 minutes, pull out the casserole and let it cool down for 5 minutes before serving.
