This recipe by RecipeTin Eats on YouTube is for sure going into my list of favorite dinner recipe ideas! It is super easy to make and very quick to prepare, this is perfect if you’re in a hurry or you don’t have a lot of time to make food. What I love about this is that you can actually make something delicious and might I say, restaurant quality with less effort and hassle. Plus, if you love jalapenos like me, then you’ll love this dish because it’s loaded with lots of them, so try it now!

Ingredients:

  • 2 (220 grams or 7 ounces each) chicken breast, skinless, boneless
  • ¼ tsp of cooking or kosher salt
  • ½ tsp of smoked paprika or ordinary paprika
  • 1 tbsp of extra-virgin olive oil

Jalapeño Popper Stuffing

  • 60 grams or 2 ounces of cream cheese
  • ½ cup of mozzarella cheese, or any kind, shredded
  • ¼ cup of parmesan, finely shredded
  • 2 jalapeños, deseeded and finely diced
  • ½ tsp of garlic powder
  • ½ tsp of black pepper
  • ½ tsp of cooking or kosher salt

Directions:

Step 1

Preheat your oven to 180°C or 350°F, then cut pockets into each chicken breast as shown in the video, and prepare the stuffing. Place the cream cheese in a microwave-safe bowl, then heat it up for around 30 seconds to soften, and then in the same bowl, add the shredded mozzarella cheese, shredded parmesan cheese, finely diced jalapenos, garlic powder, salt, and black pepper. Mix them all together until well combined, then stuff the chicken breasts with it making sure to divide the filling evenly, and seal them with 2 or 3 toothpicks. Season both sides with paprika and salt, and then rub them in nicely.

Step 2

Place an oven-proof skillet pan on a stove over medium-high heat, then add some oil, and allow it to heat up before placing the stuffed chicken breasts with their smooth side down. Sear them for about 2 minutes or until golden brown, then flip them over gently, and sear the other side for another 2 minutes. Place them in the preheated oven and let them bake for about 15 minutes or until the internal temperature has reached 67°Cor 155°F. Once done baking, remove them from the oven, then transfer the chicken to a serving plate, and allow them to rest for about 5 minutes before serving. Enjoy!
