Step 1

Place a nonstick pan on a stove over medium heat, then add the bacon, and cook it until crispy and golden brown. In the same pan, add the Panko breadcrumbs, then toast them for about 3 minutes or until golden brown, and transfer them to a plate.

Step 2

Finely chop the cooked and cooled into crumbs, then reserve ¼ of the bacon for topping later. In a large mixing bowl, add the rest of the bacon, cream cheese, cheddar cheese, green onion, garlic, salt, and black pepper, then mix everything well until fully combined, and set the filling aside.

Step 3

Cut the jalapeño in half, then scrape out the seeds and white membrane, and stuff them with the cream cheese filling. Put them on a wire rack in a single layer, then place the rack on top of a baking sheet lined with aluminum foil.

Step 3

Top them with cheese, then press it down flatten a bit, and spoon the panko topping over the filling. Place them in a preheated oven at 375°F, then let them bake for about 15 minutes or until the cheese has melted and the peppers are soft. Sprinkle them with bacon and chives, then serve hot, and enjoy!
