Step 1
Preheat your oven to 425°F, then grease a cast-iron skillet with butter or nonstick cooking spray, and set it aside.
Step 2
In a large mixing bowl, add the flour, baking powder, baking soda, and salt, then give them a good whisk, and grate over the cold butter.
Step 3
Mix them with a fork until each butter shred is lightly coated with the flour mixture, then pour in the buttermilk, and add in the jalapeño slices and shredded cheddar cheese.
Step 4
Mix everything until a shaggy dough forms, then transfer the dough to a lightly floured counter, and shape it into a rectangle.
Step 5
Fold it into thirds, rotate it, then repeat patting and folding 2 to 3 more times to create layers, refer to the video for this process, and then roll it out so it’s the same size as the cast iron.
Step 6
Place the dough into the prepared skillet, then make deep cuts on the dough into your desired biscuit sizes, and brush them with melted butter if desired.
Step 7
Place the skillet in the preheated oven, then allow the biscuits to bake for about 20 minutes or until golden brown and a toothpick inserted at the center comes out clean. Let them cool slightly, then serve, and enjoy!
