Step 1
Add the chili oil to the pot, then press the sauté button, and adjust it to a more or high setting. Let it heat up for about 3 minutes, then add the mushrooms and ginger, give them a good stir, and sauté them for about 3 minutes. Add the rice vinegar, then scrape and deglaze the bottom of the pot, and pour in the broth followed by the soy sauce and white pepper.

Step 2
Add in the bamboo shoots and wontons or dumplings, then place the spinach on top, and close the lid of the pot. Press the cancel button, then press the pressure cook or manual, and set it at high pressure for only 1 minute. After a minute, quick release, then mix together the water and cornstarch until uniform, press the cancel button, then sauté, and then adjust it to more or high settings.
Step 3
Once it’s bubbling, add the slurry, then stir them around for about 30 seconds to combine, and turn off the heat. Now, add the remaining chili oil followed by the chili garlic sauce, sesame oil, hoisin sauce, scallions, and sesame seeds, then give them a good mix, and serve. You can garnish it with more sesame seeds and scallions. Enjoy!
