Ingredients:

  • 3 tbsp extra virgin olive oil
  • 1 large green or red bell pepper or mixed, diced
  • 1 medium yellow or red onion, diced
  • 3 ribs celery, diced
  • 6 cloves or 2 tbsp garlic, minced or pressed
  • 14 ounces smoked sausage, sliced into ¼ or ½-inch pieces and quartered
  • 3 cups broth, any kind
  • 1 tbsp creole seasoning
  • 2 tsp Italian seasoning
  • 2 cups long-grain white rice, jasmine or brown rice, rinsed
  • 2 (15.5-ounce) cans of red kidney beans
  • 1-2 tbsp hot sauce, optional

Directions:

Step 1

In the instant pot, add the olive oil, then press the saute button, and adjust it to the high setting. Let the oil heat up for about 3 minutes, then add the chopped pepper, onion, and celery, and give them a good toss. Saute them for about 3 minutes or until translucent, then add the garlic and sausage, and continue to cook them for about 3 more minutes. Pour in the broth, then add the creole seasoning and Italian seasoning, and stir them all together to combine.

Step 2

Add the rice, then spread and smooth it out evenly until submerged in the liquid but do not stir, and then secure the lid. Move the valve to the sealing position, then press the manual or pressure cook button, and allow it to cook for about 3 minutes (white or jasmine) or 15 minutes (brown) at high pressure.

Step 3

Once done cooking, allow it to naturally release for about 10 minutes followed by a quick release, then add the beans including the juices, and stir them all together until combined. You can also add hot sauce at this point if desired, then mix them together, and let them rest for about 5 minutes until the beans are heated up. Serve with more hot sauce if desired and enjoy!
