Ice cream is one of my favorite types of dessert and I can eat them all day and all week without getting tired of them, especially during the summer. Choosing a single flavor is the difficult part because there are just a lot of tasty options, but when it comes to the deciding part, I always opt for 2 or 3 flavors in 1. That way I can enjoy all of those flavors at once without having to choose between them.

However, once the cold season comes, I won’t be able to enjoy a delicious ice cream, luckily, there is a cookie version of my favorite Neapolitan ice cream, and I’m so ready for it, and this might even become a new favorite of mine. Ingredients for Neapolitan Ice Cream Cookies:

Cookie Dough

  • 1 cup of unsalted butter, softened
  • 1½ cups of granulated sugar
  • 2 large eggs, at room temperature
  • 4 cups of cake flour
  • 1 tbsp of cornstarch
  • 2 tsp of baking powder
  • ¼ tsp of baking soda
  • ¾ tsp of salt

Vanilla Dough

  • 2 tsp of vanilla bean paste
  • 2 tbsp of cornstarch

Chocolate Dough

  • 3 tbsp of natural cocoa powder

Strawberry Dough

  • 1/3 cup of freeze-dried strawberry powder

How to Make Neapolitan Ice Cream Cookies:

Step 1

Beat together the butter and sugar in a large mixing bowl until fluffy and well combined, then add the eggs, and continue to beat until incorporated. In another medium-sized mixing bowl, add the cake flour, cornstarch, baking powder, baking soda, and salt, then whisk everything until uniform, and add it in batches to the wet ingredients while mixing continuously in between each addition until completely combined.

Step 2

Divide the dough into three separate mixing bowls evenly, then the vanilla bean pasta and cornstarch, cocoa powder, and strawberry powder into each dough portion, and stir them until fully combined.

Step 3

Put all of the cookie dough into a single bowl as shown in the video, then cover the bowl with plastic wrap, and place it in the refrigerator to chill for at least 60 minutes. Once the dough is almost ready, preheat your oven to 375°F, then line each baking sheet with parchment paper, and set them aside.

Step 4

After an hour of chilling the dough, remove it from the fridge, then scoop out 1½ tablespoons through all three flavors, and place it into the prepared baking sheet. Proceed to scoop the rest of the dough, then space them evenly about 2 inches apart, and put them in the preheated oven to bake for about 9 to 10 minutes or until the edges are beginning to turn light brown. Allow them to cool down completely, then serve, and enjoy!
