Prepare a cold steel pot, then add in the ground beef, as well as the onion, green bell pepper, and garlic. Add in your seasonings as well, starting with the brown sugar, freshly ground black pepper, cayenne, kosher salt, and all-purpose flour. Next, place your pot on a stove over medium-high heat, then stir and break the meat while the temperature is rising. This will take about 15 minutes or more, you can use a wooden spoon or spatula. Continue to work on your meat, still on medium-high heat until most of the moisture has evaporated and dried.

Step 2
Once the meat has browned, add in the ketchup, mustard, Worcestershire sauce, and chicken broth or water. Stir them together until well combined, then bring them to a simmer and reduce the heat to medium. Let it cook while stirring occasionally for 45 minutes or until it has reached your desired thickness. Taste it for adjustment, then transfer it to a baking dish, poke in half portion of the cheese before topping it with the rest. Broil it for about 5 minutes or until the cheese browns and the top is bubbling, serve with your fave sliced bread.
