A delicious and satisfying meal can’t be complete without an equally yummy and mouth-watering side dish! Roasted carrots are a staple in our household, we just simply cannot get enough of them. There are many ways that you can prepare carrots but personally, I love this recipe by Cooking With Claudia on YouTube not only because it is incredibly flavorful but mostly because of how easy and simple it is to prepare. Personally, I prefer recipes that call for only a few ingredients that I already have in my kitchen because I find it more convenient and inexpensive that way, which is why I love this version.
Step 1
Preheat your oven to 425°F, then prepare the carrots by peeling off their skin, and then give them a good wash. Drain off all the water, then cut the carrots into bite-sized pieces, and set them aside. Place a skillet pan on a stove over medium heat, then add the butter, and allow it to melt before adding the carrots. Give them a good toss, then season them with salt and pepper, and continue to toss them together until well combined.

Step 2
Saute the carrots for about 2 minutes, then add the honey, garlic, and fresh thyme, and continue to toss them together to combine. Allow them to cook for about 1 more minute, then turn off the heat and remove the pan from the stove, and transfer it to the preheated oven. Allow the carrots to roast at 425°F for about 20 minutes, then broil for around 2 to 3 minutes, and serve. Enjoy!
