Ingredients:

  • 0.5 cup of honey
  • 2 tablespoons of sugar
  • a pinch of salt
  • 3.5 tablespoons of butter
  • 2.5 oz of sour cream
  • 0.5 teaspoon of baking soda
  • 1 piece of egg
  • 1.2 cups of flour

For the cream:

  • 10.6 oz of 20% sour cream
  • 4.9 oz of curd cheese or cream cheese
  • 4 tablespoons of powdered sugar
  • vanilla (optional)

Instructions:

Step 1:

In a pot, add 0.5 cups of honey, 2 tablespoons of sugar, and 3.5 tablespoons of butter. Melt all ingredients over low heat while continuously stirring.

Step 2:

In a bowl, combine 2.5 oz of sour cream and 0.5 teaspoons of baking soda. Pour the mixture into the pot and mix until well incorporated. Let it boil for 1 to 2 minutes. Once done, transfer it to a bowl, and let it cool.

Step 3:

Add 1 piece of egg to the mixture and mix. Next, add 1.2 cups of flour and whisk until well combined and smooth.

Step 4:

Transfer half of the mixture to a baking sheet lined with parchment paper. Spread evenly using a silicone spatula. Place in the oven and bake at 356 degrees F for about 7 to 10 minutes. Do the same for the other half. Once done, cut them into a rectangular shape.

Step 5:

In a big mixing bowl, combine curd cheese, 20% sour cream, and powdered sugar. Lightly mix with a spatula then beat using a hand mixer until smooth.

Step 6:

Line the two pieces of honey cake, then spread the cream on top. Once done, roll the cake gently.

Step 7:

Cover the top of the roll with the remaining cream.

Step 8:

Put the rest of the chopped cake into a food processor and turn it into crumbs. Sprinkle on top of the roll. Place in the refrigerator for about 2 to 3 hours before serving.
