The perfect side dish is often the simplest and easiest to make, just like this roasted baby carrots recipe by Cooking With Claudia on YouTube! These baby carrots are both sweet and savory, super delicious, and could make any meal so much better.
Step 1
Line a baking sheet with aluminum foil, then set it aside, and prepare the carrots. Wash the carrots well, then peel off their skin, and lay them in the prepared sheet pan in a single layer to dry completely. While waiting for the carrots to dry, prepare the glaze. In a mixing bowl, add the melted butter, make sure that the butter stays very warm in order to melt the rest of the ingredients, then add the olive oil, brown sugar, cinnamon, and freshly chopped parsley, and stir them all together until uniform and well combined. Gather the carrots at the center, then pour the glaze all over them, and toss them around until evenly coated with the glaze.

Step 2
Next, season them with some salt and pepper to taste, then give them a good toss until evenly seasoned, and spread them again in a single layer. Put them in the preheated oven and roast them at 425°F for about 20 minutes, then after exactly 20 minutes, toss it around to coat with the glaze. Put it back in the oven and change to the broil setting, then broil them for 8 more minutes making sure to toss them around once or twice to let the glaze stick to the carrots. Keep an eye on them so that they don’t burn, then once ready, garnish with more fresh chopped parsley, serve, and enjoy!
