Lime Frosting
Step 1
Whisk the eggs in a large bowl for about 1 minute, then add the milk, vegetable oil, lime juice, lime zest, and gelatin powder, and continue whisking them until incorporated. Sift over the flour, sugar, baking powder, and salt, then gently whisk them until smooth and combined but make sure not to overmix, and then set the batter aside.
Step 2
Line an 8-inch square pan with parchment paper with an overhang on the sides, then pour in the batter spreading it evenly, and place it in a preheated oven at 350°F. Let it bake for about 30 minutes or until a toothpick inserted at the center comes out clean, then allow the cake to cool completely at room temperature, and make the frosting while waiting.
Step 3
Mix the gelatin powder and hot water in a bowl until dissolved and combined, then in a separate bowl, whisk together the sweetened condensed milk and lime juice until incorporated, and then pour the gelatin mixture into the condensed milk mixture.
Step 4
Give them a good mix to combine, then pour it over the cooled cake, and spread it evenly to the sides. Sprinkle the lime zest over the top, then place it in the refrigerator, and allow it to chill for about 20 minutes. Serve and enjoy!
