Ingredients for Homemade Buckeyes:

  • 1 cup of peanut butter 
  • 5 tbsp of unsalted butter
  • 2 cups of powdered sugar
  • 1 tsp of vanilla extract
  • 2 cups of semisweet chocolate 
  • 2 tbsp of coconut oil, optional

Step 1

In a mixing bowl, add the peanut butter and vanilla extract, then beat them together until creamy and combined, add the powdered sugar, and keep mixing over low speed until combined, scraping the sides of the bowl occasionally.

Step 2

Pinch tablespoon-sized pieces of the mixture and roll them into balls, then transfer them to a baking sheet, and place them in the refrigerator to chill for at least 20 minutes or until firm. Add the chocolate and coconut oil to a medium-sized mixing bowl, then melt them in the microwave, and make sure to stir them in between each interval until smooth and combined.

Step 3

Set the mixture aside and let it cool down until room temperature, then insert a skewer or toothpick down the ball, and dip it in the melted chocolate mixture, make sure to leave some part of the peanut butter exposed as shown in the video. Allow the chocolate to firm up and set, then serve, and enjoy!
