My breakfast usually consists of fluffy pancakes drizzled with my favorite syrup and a hot coffee. I have always used store-bought pancake syrup until I discovered this recipe by MOMables – Laura Fuentes. I never thought that making homemade pancake syrup can be super easy and hassle-free, and it is so much better than store-bought because it has a richer flavor and is natural as well! What I love about this recipe, even more, is the fact that it only requires 4 simple ingredients and that I can swap the fruit with any other berries or fruit that I like to turn into syrup. Even kids love this recipe so much, try it out now, and see for yourself.

Ingredients:

  • 2 cups of fresh or frozen blueberries
  • ½ cup of sugar or honey
  • 1 cup + 2 tablespoons of water, for the slurry, and for the syrup
  • 1 tbsp of cornstarch

Directions:

Step 1

In a small mixing bowl, add 2 tablespoons of water and 1 tablespoon of cornstarch, then mix them together until uniform and well combined, and set it aside. Place a medium-sized saucepan on a stove over medium to medium-high heat, then add the water, sugar or honey, and blueberries, and bring them to a boil while stirring occasionally.

Step 2

Once boiling, lower the heat, then let the mixture simmer for about 10 minutes, and then stir in the water and cornstarch mixture until combined and incorporated. Turn off the heat, let the mixture sit for about 5 minutes to let it thicken, then transfer it to a blender, and blend until nice and smooth. Drizzle it over your favorite pancake, then serve, and enjoy!
