Ingredients for Homemade Beef Enchiladas:

Red Enchilada Sauce

  • 2 tbsp of vegetable oil
  • 1 tbsp of cornstarch
  • ¼ cup of chili powder
  • ½ tsp of garlic powder
  • ½ tsp of salt
  • ¼ tsp of ground cumin
  • ¼ tsp of dried Mexican oregano
  • 2 cups of vegetable broth

Ground Beef Filling

  • 1½ pounds of lean ground beef
  • 1 medium white onion, diced
  • ½ tsp of salt
  • ¼ tsp of black pepper
  • 7oz of diced green chiles, drained

Enchiladas

  • 12 corn tortillas
  • 2 tbsp of vegetable oil, for frying
  • 3 cups of shredded Monterey Jack cheese, divided
  • ¼ cup of freshly chopped cilantro

Red Enchilada Sauce

  1. Place a saucepan on a stove over medium heat, then add the vegetable oil, and heat it before adding the cornstarch, chili powder, garlic powder, salt, cumin, and oregano.
  2. Whisk everything until combined, then pour in the vegetable oil, and bring it to a simmer for about 2 to 3 minutes or until thickened. Turn off the heat and set the sauce aside.

Ground Beef Filling

  1. Place a large skillet over medium-high heat, then add the ground beef and onion, and season them with salt and pepper.
  2. Break the meat apart and cook it for about 7 to 10 minutes or until browned and cooked through.
  3. Drain off the excess grease, then add the green chiles, and give them a good stir to combine.

Assembling

  1. Preheat your oven to 350°F, then lightly grease a 9×13-inch baking pan with a nonstick cooking spray, and then spread ½ cup of the enchilada sauce at the bottom. Place a small skillet on a stove over medium heat, then heat 1 tablespoon of vegetable oil, and fry the tortillas one at a time until soft and not crispy.
  2. Dip the cooked tortilla in the enchilada sauce until well coated, then place it on a plate, and fill it with a scoop of ground beef filling. Sprinkle a generous amount of cheese on top, then roll it over, and place it in the prepared baking pan.
  3. Do the same for the rest, then drizzle the remaining enchilada sauce over them, and sprinkle the remaining shredded cheese evenly on top. Place the baking pan in the preheated oven, then allow it to bake uncovered for about 20 to 25 minutes or until the cheese is warm and bubbly, and then garnish with chopped cilantro. Serve hot and enjoy!
