Start by preheating your oven to 400F.
Add flour, sugar, and salt in a bowl, and mix until well combined. Next, stir in milk and oil using a fork, then shape it into a ball using your hand.
Divide the dough in half, then shape each into a 5-inch disc. Wrap one in with a wax paper and set it aside.
Roll the other one into the floured wax paper into a 12-inch diameter circle and put it into the ungreased pie pan. Patch and trim edges if needed. Add leftover dough to the wrapped half. Place them both in the refrigerator while preparing the filling.
Make the filling. In a large bowl, combine sugar, tapioca, and spices.
Peel and core the apples, then cut them into 3/4-inch slices.
Add apples to the tapioca mixture and mix until well-coated. Transfer to the prepared pie pan.
Roll the top pastry between floured wax paper, then place it on top of the pie. Trim or flute the edges. Brush the top with one tablespoon of milk, then sprinkle it with sugar. Make sure to avoid the rim.
Using a sharp knife, poke 12 slits on the top, then cut out a 1/2-inch circle in the center of the pie to release the steam. To avoid spilling, place it on a baking sheet.
Cover the rim with a pie ring or foil, then place it inside the preheated oven. Bake it for about 50 to 55 minutes or until the crust is golden. Once done, let it cool completely before serving. Enjoy!
