Step 1
Preheat your oven to 350°F, then line the baking sheets with parchment paper or lightly grease them with a nonstick cooking spray, and set them aside.
Step 2
In a large bowl, add the softened butter, sugar, and brown sugar, then beat them for about 2 to 3 minutes or until light and creamy, then pour in the graham cracker crumbs, and continue mixing until combined.
Step 3
Add the egg and vanilla extract, then keep mixing until incorporated, add the flour in batches, and mix in between each addition until incorporated.
Step 4
Scoop out tablespoons of dough and roll them each into a smooth and round ball, then place them in the prepared baking sheets, and space them about 1 to 2 inches apart from each other.
Step 5
Place them in the preheated oven to bake for about 8 to 12 minutes or until the edges are light and golden brown, then remove the cookies from the oven, and press half a marshmallow on top of each cookie with their cut side down.
Step 6
Let the cookies cool while preheating the oven broiler, then broil the cookies for about 1 to 2 minutes until the marshmallows are light golden brown, and make sure to keep an eye on them so they don’t burn.
Step 7
Once they’re broiled to your liking, remove them from the oven, then immediately place a Hershey Kiss on top of each marshmallow, and let them cool completely. Serve and enjoy!
