This recipe by Food Wishes on YouTube is a simple dish that will surely bring back fond childhood memories! Red-eye gravy is a yummy sauce loved by many and is usually paired with ham slices, biscuits, some sunny-side-up egg, or any food you like.
Step 1
Place a medium skillet pan on a stove, then turn your heat to medium, and then start slicing some ham scraps into smaller pieces. Put the ham scraps in the hot pan, then start cooking them for about 5 minutes or until browned and have rendered fat. Remove the cooked ham bits and transfer them to a plate, then leave the rendered grease in the pan. Put the ham slices in the pan, then cook them still over medium heat for about 5 minutes on each side or until they are nice and browned.

Step 2
Season both sides of the ham with salt, black pepper, and cayenne pepper, then remove them from the pan, place them on a serving plate, and set them aside. Reduce your heat to medium-low, then sprinkle some flour over the pan drippings, and stir them around. Let the flour cook for about 2 minutes, then increase the heat to medium-high, and pour the coffee into the pan. Give them a good stir until well combined, and let them cook until it thickens, then season the mixture according to taste. Put the cooked ham back into the pan to warm through, then serve, and enjoy!
