Peel the potatoes and slice them into big chunks. Fill a pot with water and place over heat. Add the sliced potatoes and some salt. Cover with the lid and cook until it’s soft.
Once the potatoes are cooked, strain them and place them in a bowl. Mash the potatoes using a fork or potato masher. Chop the parsley, then add to the mashed potatoes. Set it aside to let it cool completely.
Grate the cheese and add to the mashed potatoes. Season with some black pepper.
Stack the slices of cheese and cut them into 4 squares. Do the same for the cooked ham.
In a different bowl, crack 2 eggs and beat well. Sprinkle the breadcrumbs on a plate.
Scoop 1 big spoon of the mashed potato, flatten using your hands, then place 2 slices of cheese and 2 slices of ham. Scoop another spoon of the mashed potato and place it on top. Form into a big oval. Continue the same process for the remaining mashed potato, ham, and cheese.
Dip each potato cake in the beaten egg, then coat it with breadcrumbs.
Pour a generous amount of oil into a pan, then fry the potatoes. Cook them until golden brown.
