Ingredients:

  • 3 lb ground beef
  • 1 large white onion, diced
  • 3 cloves of garlic, minced
  • 1/4 cup chili powder
  • 1 tbsp ground cumin
  • 1 tbsp coarse kosher salt
  • 2 jalapenos, finely minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (6 oz) tomato paste

Directions:

Step 1

To start, prep your ingredients. Dice one large onion, mince three cloves of garlic, and finely mince two jalapenos. Set them aside. Next, cook the ground beef in a large pan (or Dutch oven if you have one) over medium-high heat. Once browned, add the diced onion and minced garlic.

Step 2

Next, add the spices: 1/4 cup chili powder, 1 tbsp ground cumin, 1 tbsp coarse kosher salt, then the finely diced jalapenos. Sear everything for a couple of minutes over medium heat and mix them thoroughly. After this, add 1 can (28 oz) of diced tomatoes, 1 can (15 oz) of red kidney beans, 1 can (15 oz) of pinto beans, 1 can (15 oz) of tomato sauce, and 1 can (6 oz) tomato paste. Mix well. Once thoroughly incorporated, put the lid on, and simmer for about two hours.
