Preheat the oven to 375 degrees F and grease your casserole dish with some cooking spray. Next, heat some cooking oil in a skillet over medium-high heat. Once the oil is hot enough, add the ground beef, break it apart, and brown it for about three minutes. After this, push the ground beef along the sides of the pan, creating a well in the middle, then add a little oil. Add the diced onion and garlic paste, allow it to cook a little, then incorporate it with the ground beef.

After cooking the ground beef, pour it into the prepared casserole dish and spread it evenly. Next, add the corn over the ground meat along with the beans, taco seasoning, a 14 oz jar of chunky salsa, one cup of minute rice, and 1 cup of Mexican cheese. Mix it all together, making sure everything is well incorporated, then spread it out evenly throughout the casserole dish. After this, add the chicken broth. Lastly, cover it with aluminum foil and place it in the preheated oven at 375 degrees F and bake for 25 to 30 minutes. After baking, add the remaining 1 cup of cheese and place it back in the oven, allowing the cheese to melt (about five minutes).
