Travis Blue shares an easy recipe for a grits casserole that will fill you up until your next meal. This delicious casserole is the best to have on a Christmas morning or even for your weekend brunch. But, during the busy days, you can opt to prepare it ahead of time during the evening and heat it up for breakfast. This way, you’ll have a hearty breakfast on the go.

Ingredients:

  • 1 cup grits
  • 8 eggs, beat
  • 8 ounces of shredded cheddar cheese.
  • 4 ounces of shredded Monterey Jack cheese.
  • 1 pound of cooked breakfast sausage.
  • Salt and pepper

Directions:

In a 4-quart saucepan, put in your cup of grits, 4 12 cups of water, 1 tablespoon of salt, and 2 tablespoons of butter. Bring these to a boil and stir occasionally. This takes about an hour until it’s done and ready to go into the casserole. Set aside your cooked grits to let them cool for a bit.

Spray your 9″ x 13″ pan with cooking spray. Make sure that every inch of it is covered.

Put the sausage into the grits and mix them together. Then, put the cheese and the eggs on the mixture. After these are all mixed together, put the mixture onto the pan.

Put aluminum foil on top of the pan and bake it in the oven at 350 degrees Fahrenheit for about 60 minutes. At the 45-minute mark, take the foil off just across the top. Once done, you’ll get a casserole with golden brown edges. For a finishing touch, you can opt to top it off with salsa.
