Ingredients:

  • 4 cups of apples, diced
  • ¼ cup of orange juice or 2 tsp of lemon juice
  • 2-4 eggs
  • ½ tsp of salt
  • ½ cup of butter
  • ½ cup of oil
  • 2 cups of all-purpose flour
  • 2 tsp of baking powder
  • 1 tbsp of cinnamon powder
  • 1 tsp of baking soda
  • 1-3 tsp of vanilla extract
  • 1½ cups of sugar
  • 1 cup of chopped pecans or walnut

Toppings (choose 1 that you want)

  • Powdered sugar
  • Caramel sauce
  • Glaze (1 cup powdered sugar, ¼ tsp vanilla extract, 2-4 tbsp milk, 1 tsp cinnamon powder, ¼ cup sugar)
  • Brown sugar glaze(1 cup brown sugar, ½ cup butter, 2 tbsp milk, 1 tsp vanilla, a pinch of salt)
  • Cream Cheese Topping (8 oz block cream cheese, 1 stick butter, 1 cup sugar, 1 tbsp vanilla extract)

Directions:

Step 1

In a large mixing bowl or measuring cup, add the eggs, then whisk them well before adding the oil and melted butter, and then continue to whisk until well combined. Add in the sugar while whisking continuously, then add the nuts and diced apples with orange or lemon juice followed by the vanilla extract, and carefully fold and mix them together until well combined. When there is no more dried flour visible in the mixture and you have a thick batter, then transfer it to a clean baking pan, and spread it evenly.

Step 2

Place it in a preheated oven at 350°F, then allow it to bake for about 45 to 55 minutes or until bouncy and a toothpick inserted at the center comes out clean. While waiting for the cake to bake, prepare the glaze that you want, then once the cake is nice and brown at the top and fully cooked, remove it from the oven, and pour the prepared glaze all over the top evenly. Serve and enjoy!
