Have a busy week ahead? Here’s an easy grab-and-go breakfast muffin recipe by Resourceful Mama on Youtube. These freeze well, so you can make them on a weekend, and just get one whenever you need a snack. Plus, you can customize this however you want!  I am sure everyone in your family will love this, even the kids.

Ingredients:

  • eggs (6 to 9 eggs per 12 muffins)
  • cooked bacon (cut into bits)
  • ham (cut into small cubes)
  • cheese (cut into small cubes)
  • scallions (sliced)
  • onion (diced)
  • red bell pepper (diced into small pieces)
  • salt and pepper to taste

Note: if you don’t like the onion and red bell pepper, you can remove them

Instructions:

Step 1:

Set oven to 350 degrees Fahrenheit. Spray your muffin pan with cooking spray, or you can also line them.

Step 2:

Crack eggs in a bowl. You can strain them if you don’t like the egg whites. Beat well then season with salt and pepper.

Step 3:

Add the bacon bits, ham, cheese, scallions, onion, and red bell pepper. Adjust the amount based on your preference. If you like it to be more cheesy, you can add mozzarella cheese or other types of cheese. Mix until well combined. If you are also making them for your kids, you can do a different batch without the onion and red bell pepper.

Step 4:

Ladle the mixture to your prepared muffin tray. Make sure to get the filling and egg. Be sure not to fill it too much or it might spill.

Step 5:

Place the muffin tray inside the preheated oven and bake for about 10 minutes. The time will depend on your oven, so be sure to check it halfway through. It should be a little bit browned on top.

Step 6:

Once done baking, remove it from the oven and let it cool for a while. Remove from the muffin pan and serve. Enjoy!

These are perfect to freeze too.
