Ingredients:

  • 200 grams or 7 ounces of bittersweet chocolate
  • 100 grams or ½ cup of unsalted butter, cubed
  • 150 grams or 2/3 cup of caster sugar
  • 3 eggs, at room temperature
  • A pinch of salt
  • 50 grams or 6 tbsp of cornstarch
  • 25 grams or 1½ tbsp of milk, at room temperature

Directions:

Step 1

Line a springform pan with parchment paper, then grease it with butter or nonstick cooking spray, and dust the sides with sweetened cocoa powder. In a double boiler, melt the chopped chocolate and butter together, then set the aside, and let them cool down. In a large mixing bowl, add the egg whites, then whip them until foamy, and gradually incorporate the sugar. Continue to mix them together until stiff peaks form, then in a medium-sized bowl, mix together the egg yolks, sugar, and a pinch of salt until thick and pale, and then incorporate the melted chocolate and milk.

Step 2

Sift over the cornstarch, then mix them to combine, and gently fold in about a third of the egg whites until well combined. Pour the yolk mixture into the remaining white mixture, then gently fold them together to combine, and transfer the batter into the prepared pan. Put it inside the preheated oven at 170°C-340°F to bake for about 35 minutes, then turn on the fan, and continue to bake for an additional 15 minutes. Once the cake starts crackling at the top and a toothpick inserted at the center comes out moist and dirty, then your cake is done. Let it cool down for at least 30 to 40 minutes, then unmold it, and let it cool down. Serve with ice cream or whipped cream on top and enjoy!
