The moment I saw this recipe by HidaMari Cooking on YouTube, I immediately knew that I had to give it a try. This 3-layered goodness looks so mouth-watering that I just can’t stop myself from trying it, and it was one of the best decisions I ever made because the cake turned out so great!

This cake is perfect to serve or make for parties, holidays, or other special occasions, especially Birthdays. But, you can also make this for an ordinary day, then store it in the fridge, and get a serving whenever you want!

Ingredients for Gluten-Free Chocolate Cake:

Sponge Cake

  • 2 whole eggs
  • ¼ cup of sugar
  • ½ cup of rice flour
  • 1 tbsp of cocoa powder
  • 2 tbsp of heavy cream

Chocolate Cream

  • ¾ cup of sweet chocolate chips
  • 4 tbsp of milk
  • ¾ cup of heavy cream
  • 2½ tsp of sugar
  • Ferrero Rocher

Step 1

Preheat your oven to 170°C or 338°F, then line a round cake pan with parchment paper on the sides and bottom, and set it aside. In a mixing bowl, beat the eggs, then add the cane sugar in 2 batches, and continue beating until light and fluffy.

Step 2

Sift over the rice flour and cocoa powder, then fold and mix them until incorporated, add some of the mixture to a small bowl of heavy cream, and give them a good mix. Pour it back into the large bowl, then mix until evenly combined, and pour the batter into the prepared pan.

Step 3

Tap the pan on the surface to remove any trapped air bubbles, then place it in the preheated oven, and allow it to bake for about 20 to 25 minutes. Once done baking, unmold the cake, then let it cool down completely, and remove the paper. Slice it through into 3 cake layers, then flatten the curved top if desired, and set them aside.

Step 4

Place a bowl of chocolate chips over a bowl of hot water, then stir it until completely melted, add the milk in 2 batches, and mix well in between each addition until smooth and shiny. Remove the bowl of chocolate from the hot water bowl and allow it to cool down. Place a bowl over another bowl of ice water, then pour in the heavy cream and sugar, and beat them gently until combined.

Step 5

Remove the bowl from the ice water, then add the chocolate mixture, and whisk them until stiff peaks form. Transfer the chocolate cream to a piping bag, then pipe in between each cake layer making sure to spread the frosting evenly, and then stack them together.

Step 6

Mix together the melted chocolate chips, milk, heavy cream, and sugar, then pour it over the top of the cake, and spread it evenly. Place some Ferrero Rocher on top, then decorate the cake with the remaining cream however you want, and serve. Enjoy!
