You can enjoy these delicious muffins guilt-free with this recipe by Chef Jana on YouTube! They are so soft, loaded with lots of veggies, cheesy, and most of all, gluten-free. You should definitely give this tasty food a try, you won’t regret it.
Step 1
Place a skillet pan on a stove over medium heat, then add some olive oil, and let it heat up before adding the onions. Give it a good toss and saute until golden, then add the zucchini and salt, stir them well, and saute them for 2 more minutes. Add the carrots, then saute them for about 2 minutes before adding the minced spinach and black pepper, and cook them until golden brown and with no liquid on the bottom of the pan. Once done cooking, transfer the vegetables to a bowl, then set aside, and allow to cool completely.

Step 2
Once the vegetables have cooled completely, add any type of flour followed by, cheese, salt, and baking powder, then pour the water, vegetable broth, or unsweetened vegan milk, and mix them together until incorporated. Adjust the amount of flour and water until the vegetable batter has reached the desired consistency, then transfer the muffin batter into a greased muffin tin, and let it bake in a preheated oven at 180°C or 365°F for about 15 to 20 minutes. Serve and enjoy!
