Ingredients for Glazed Blueberry Biscuits:

Biscuits

  • 2 cups of all-purpose flour, sifted
  • ½ cup of granulated sugar
  • 1 tbsp of baking powder
  • 1 tsp of salt
  • ¼ cup of butter-flavored shortening
  • ¼ cup of unsalted butter
  • 1 cup of cold buttermilk
  • ½ tsp of vanilla extract
  • ¾ cup of frozen blueberries
  • 1 tsp of flour, for coating the blueberries
  • 1-2 tsp of half and half, for brushing
  • 1-2 tbsp of melted butter, for brushing

Glaze

  • 1 cup of powdered sugar
  • 2 tbsp of half and half, or more as needed
  • 1 tbsp of unsalted butter, melted
  • ¼ tsp of vanilla extract
  • A pinch of salt

How to Make Glazed Blueberry Biscuits:

  1. Preheat your oven to 450°F, then lightly grease the bottom of a dark 9-inch round cake pan, and set it aside. In a large mixing bowl, add the flour, sugar, baking powder, and salt, then whisk everything together thoroughly, and add in the shortening.
  2. Incorporate and mix the shortening with a pastry cutter until the mixture looks crumbly, then grate the frozen butter, and toss them together until well coated and mixed. Mix the vanilla extract and buttermilk, then pour them into the dry ingredients and stir them until dough forms.

  1. Transfer the dough to a floured surface, then knead into a soft ball, flatten the dough, and fold it about 2 to 3 times. Pat the dough until a 1-inch thick rectangle, then toss the frozen blueberries in flour and add it to the dough.
  2. Press the blueberries into the dough, then carefully fold it in half, and press it back out as shown in the video. Repeat folding and pressing the dough two more times, then pat it back into a 1-inch thick rectangle, and cut it into 8 biscuits using a round cookie cutter dipped in flour.
  3. Place them in the prepared pan with their sides touching, then brush their top with half and half, and put them in the middle rack of the oven to bake for about 20 minutes. Remove it from the oven, then brush them with melted butter, and broil them for an additional 1 to 2 minutes until lightly golden brown.

  1. While waiting for the biscuits to cool, mix the powdered sugar, melted butter, and half and half in a mixing bowl, then add the vanilla extract and salt, and continue to stir until fully combined.
