Gingerbread cookies are a must every Christmas and it is something that not only the kids enjoy eating but even the grown-ups. It’s a very traditional treat that I’m sure your Granma or Mother has baked for your at least once when you were a kid.

But, you don’t have to wait for Christmas or be a kid to enjoy gingerbread cookies, you can now have them anytime you want with the help of this recipe by COCO-NAHD by Dhan Tandel on YouTube. It’s a very easy recipe that I’m sure even beginner bakers can make. Learn how now.

Jaggery Syrup
Step 1
Place a small saucepan on a stove over low heat, then add in the jaggery and water, and bring them to a simmer until melted and combined. Turn off the heat, then remove the saucepan from the stove, and let the syrup cool completely. For the cookies, sift together the flour, spices, baking soda, and sugar, then gather them together, and make a well at the center.
Step 2
Put the cubed butter in the center, then use a fork to press and mix everything together until crumbly texture, and then make a well at the center again. Pour in the jaggery syrup, then mix well to combine, add the water, and mix them using your hands until dough forms. Wrap the dough with plastic, then put it in the refrigerator, and let it chill for at least 30 minutes.
Step 3
Once ready, line your counter with parchment paper, then dust it with flour, unwrap the dough, and put it down the parchment paper. Lay another piece of parchment paper on top, then roll the dough to the same thickness as a dowel, dust your cookie cutter, and proceed to cut the dough into any shape you want.
Step 4
Carefully take the cut cookies and transfer them to a baking sheet lined with parchment paper, then gather the leftover dough or trimmings, reshape, and flatten them again. Cut out more cookies, then repeat until there are no more trimmings left, and while you’re at it, preheat your oven to 170°C or 338°F. Place the cookies in the oven, then let them bake for about 16 to 18 minutes or until the edges are golden brown.
Step 5
In a mixing bowl, add the powdered sugar and cold milk, then stir them until dissolved and smooth, and let them sit for at least 10 seconds before transferring to a piping bag. Once the cookies have cooled, decorate them with the prepared icing as shown in the video, and let them sit until the icing has hardened. Serve and enjoy!
