This German potato salad is the perfect dish for any occasion and it’s so easy to make that you can finish it in just a few minutes! The potatoes are boiled to perfection, then coated with a deliciously sweet and savory dressing, and topped with crispy bacon bits. Dressing
Step 1
Place the potatoes in a large saucepan, then fill it with water until about 2 inches or the potatoes are covered, and bring it to a boil. Reduce the heat to a low boil, then cook them for about 15 to 25 minutes or until fork tender, and turn off the heat. Drain off all the water and set the potatoes aside, then let them cool uncovered for about 30 minutes.
Step 2
Place a large skillet on a stove over medium heat, then add the olive oil, and heat it before adding the bacon. Cook them for about 8 to 10 minutes or until brown and crispy making sure to stir occasionally, then remove them with a slotted spoon, and transfer them to a plate lined with paper towels to drain off the excess oil.
Step 3
Leave about 3 to 4 tablespoons of bacon grease in the pan and store the rest, then in the same pan, saute the red onion for about 3 to 4 minutes until softened, and add the minced garlic. Continue to saute for another 30 seconds, then add the vinegar, chicken stock, mustard, and sugar, and season them with salt and pepper to taste.
Step 4
Keep stirring for about 2 minutes until slightly reduced, then turn off the heat, and set the dressing aside. Cut the warm potatoes into bite-sized pieces, then transfer them to a large mixing bowl, and pour the dressing over them. Add the bacon and herbs, then gently toss everything together until well coated, and garnish with more parsley or dill if desired. Serve and enjoy!
