  • 2.2 pounds of potatoes
  • ¼ cup of parmesan
  • ½ cup of bread crumbs
  • Salt, to taste
  • Oregano, to taste
  • Smoked paprika, to taste
  • 1 clove of garlic

  • Parsley
  • ½ cup of yogurt
  • 2 tbsp of cottage cheese
  • Salt and pepper, to taste
  • 1 clove of garlic

Directions:

Step 1

Slice the potatoes into wedges, then add them into a large mixing bowl, sprinkle some salt, and add hot water until covered. Place a lid and set it aside. On a plate, add the parmesan, bread crumbs, grated garlic clove, salt, oregano, and smoked paprika, then mix them all together until well combined and uniform. Line a tray with a paper towel, then place the potato wedges in a single layer, place another set of paper towels, and pat dry until most of the moisture is gone.

Step 2

Transfer the dry potatoes into a separate large mixing bowl, then add the olive oil, and give them a good toss to coat. Place them on a baking sheet lined with parchment paper in a single layer, then bake them in a preheated oven at 365°F for about 35 to 40 minutes, and while waiting prepare the dip. In a small mixing bowl, mix together the yogurt, ricotta cheese, salt, pepper, chopped parsley, grated garlic clove, and olive oil, then serve together with the freshly baked potatoes, and enjoy!
