Ingredients:

  • 2 pounds of small red potatoes
  • 1 tsp of kosher salt, or more, for boiling
  • 1 tbsp of freshly chopped or dried rosemary
  • 5 medium cloves of garlic, minced
  • 2 tbsp of olive oil, for roasting
  • 1 tbsp of olive oil, for seasoning
  • 1½ tsp of lemon pepper, or to taste
  • 1½ tsp of seasoning salt
  • Salt, optional
  • Chopped parsley, for garnish

Directions:

Step 1

Fill a Dutch oven with water, then place it on a stove over high heat, and let the water heat up before sprinkling some salt. Add the clean potatoes to the hot water, then let them boil for about 12 minutes, and drain off all the water. Once drained, transfer the potatoes to a baking sheet, then spread them in a single layer, and let them cool down for about 4 minutes. While waiting for the potatoes to cool down a bit, prepare the seasoning in a small mixing bowl, simply mix together the garlic, rosemary, and olive oil, and then set it aside for later.

Step 2

After 4 minutes, slice the potatoes in half lengthwise, then transfer them to a large mixing bowl, and drizzle about a tablespoon of olive oil. Season the potatoes with lemon pepper and seasoned salt to taste, then give them a good toss, and lay them on a baking sheet in a single layer and their skin side up. Put them inside the preheated oven at 425° to roast for about 30 minutes, then flip them over, and put them back in the oven to roast for 15 more minutes. Once done roasting, remove the potatoes from the oven, then pour the prepared seasoning, and give them a good toss. Put them back in the oven to roast for an additional 2 minutes or more, then transfer them to a serving bowl, serve, and enjoy!
