Ingredients:

  • 6 cups of plain full-fat yogurt
  • 3 tbsp of honey
  • ¼ cup of blueberry jam
  • 2 tbsp of dark chocolate chips
  • 2 tbsp of dried flaked coconut, toasted

Place a paper towel or a strainer lined with cheesecloth on a large mixing bowl, then put the yogurt on the strainer, and then cover it with plastic wrap. Leave it for about 24 hours allowing it to strain, then once done, discard the liquid, and place the strained yogurt in a separate mixing bowl along with the honey. Mix them together until well combined, then pour it on a baking tray lined with parchment paper making sure that there is excess hanging over the sides for easy removal, and spread it out evenly to about ½ inch or desired thickness. Put about 4 spoonfuls of blueberry jam all over the top, then swirl them around as shown in the video, and then sprinkle the chocolate chips and flaked toasted coconut all over the top. Place it inside the freezer, then leave it for about 2 to 4 hours or until completely frozen, and once ready, remove it from the freezer. Using a sharp knife, break the bark into bite-sized pieces, then serve, and enjoy!
