Step 1
Soft the flour and salt in a large mixing bowl, then add the cold butter and the shortening cut into small pieces, pour the water, and stir them all together until the dough begins to form. Transfer the dough mixture to your work surface, then start kneading it until soft and it turns into a crumbly ball. Cut it into 8 equal-sized pieces and roll each piece into a ball. Place the dough balls on a baking sheet, then press them into a disc, cover, and place them in the fridge to chill for about 30 minutes or until ready to use.

Place a large saucepan on a stove over medium heat, then add the peaches, granulated sugar, and brown sugar, and toss them around until the peaches are coated with the sugar. Bring it to a simmer until the peaches are tender, and mash them, then continue to simmer the mashed peaches until thick and their juices have dissolved. Add the butter and lemon juice, then give them a good stir, and add cornstarch as well if needed. Remove from heat and allow to cool completely, then set it aside.

In a large mixing bowl, add the powdered sugar and milk, then stir them together until silky, add more milk if needed. Add a pinch of salt and some vanilla extract, stir them together until well combined, and set it aside. Roll the dough ball into 5 to 6 inches wide pieces, then place about 2 tablespoons of peach filling in the center. Fold the dough over the filling, then press the edges together firmly, trim the edges, and crimp it using a fork. Heat oil in a deep-fryer or deep skillet to 350°F, then add 2 to 3 pies per batch and fry them for about 3 to 4 minutes or until both sides are lightly golden. Place the fried pies on a cooling rack, then brush one side with the glaze, let it harden, and brush them once again. Let the glaze harden, serve and enjoy!
