Dipping sauce
Step 1
Start by boiling the pasta according to package instructions, then strain, and transfer to a large mixing bowl. Make sure to place the cheese in the freezer for a few minutes before shredding. Season the hot pasta with all-purpose seasoning or with salt, pepper, garlic, onion powder, smoked paprika, and cayenne, then add the shredded cheeses, and stir constantly until the cheese melts and seasoning is evenly distributed, taste and adjust the flavor as needed. Transfer to a baking dish or casserole, then spread it nice and even before covering with a plastic wrap, and place in the fridge for at least one hour up to overnight.

Step 2
Prepare the dipping sauce in a mixing bowl, simply whisk together the mayo, garlic paste, sriracha, ketchup, cajun or creole seasoning, and all-purpose seasoning until well combined and uniform, then set it aside. Prepare 3 bowls or plates, then fill one with a mixture of beaten eggs and a dash of heavy cream, the other with all-purpose flour and all-purpose seasoning mixed together, and the last one with a mixture of breadcrumbs and all-purpose seasoning. Scoop some of the mac and cheese, then shape it into a ball, cover it with flour, dip in egg, and coat with breadcrumbs. Place them in a sheet pan lined with aluminum foil, then place a large deep pan on a stove over medium-high heat, and heat up the oil to about 350 degrees. Start frying the mac and cheese balls in batches to not overcrowd the pan until nice, crispy, and golden. Serve together with the dipping sauce, and enjoy!
