After watching this video tutorial by Sweet Adjeley on YouTube, I immediately knew that I had to try making this super delicious cucumber salad! It only requires basic ingredients and a few simple steps to make this yummy dish, and the result is so satisfyingly good. I’ve been making this salad frequently ever since watching the video tutorial, I tried tweaking the ingredients a bit and they tasted even better!

Ingredients:

  • 2 pieces of eggs, boiled
  • 3 pieces of baby cucumbers or 1 large
  • ¼ piece of a small onion
  • 1 small piece of carrot
  • 1 piece of tomato
  • 1 tablespoon of apple cider vinegar
  • Cooking oil spray
  • 4 tablespoons of mayonnaise
  • 1 tablespoon of honey

Directions:

Step 1

Start by boiling 2 pieces of eggs until they are cooked through, then transfer them to a large bowl, and sprinkle some salt on them before adding cold water. Leave it and set it aside until it has cooled down completely. Give your veggies a good wash and let them dry, then start slicing them. Cut the cucumbers into a half-moon shape, same with the carrot but make sure to slice it thinly. Dice the tomatoes, then slice the onion into rings.

Step 2

Grab the boiled eggs and start peeling off their shell, then start slicing them into cubes. Transfer all of the ingredients to a large mixing bowl, then add a tablespoon of apple cider vinegar, and spray it with your preferred cooking oil. Give them a light toss, then add the mayonnaise and honey, and mix them all together until well coated. Cover the bowl with a plastic cling wrap, then let it chill in the fridge before serving.
