What I love about this salad is the texture and how all of the ingredients are tiny and fun to bite, plus, the taste of the cheese and the dressing perfectly balance each other, while the lime offers a hint of freshness and sourness. Step 1
Place a pot filled with water on a stove over medium-high heat, then sprinkle some salt, and add the corn. Boil them for about 5 minutes, then transfer them to a bowl of cold water, and once cooled down, drain off all the water. Stand each cob nicely, then cut the flesh really close to the center, and then transfer them to a large mixing bowl. Drain the juices of the black beans and rinse them well, then shake off the excess water left on them, and transfer them to the bowl of corn.

Step 2
Next, chop the onion, bell pepper, and cilantro, then cut the tomatoes in half, mince the garlic, and add them all to the bowl. Zest the lime over the bowl, then add the crumbled cheese and add the dressing. Give them a good toss to combine, then add the cubed avocado flesh, and add more dressing as needed and salt to taste. Continue to toss them gently until well combined, then serve, and enjoy!
