Step 1
Season the pork chops with salt and pepper, then place a large skillet over medium-high heat, add 1 tablespoon of olive oil, and let it heat before adding the pork chops. Sear them for about 3 to 4 minutes per side until golden brown, then remove them from the skillet, and set them aside.
Step 2
In the same pan, add the remaining olive oil, then add the sliced onions and sugar, and cook them for about 15 minutes while stirring occasionally until the onions are caramelized and golden brown, and then add the minced garlic and thyme.
Step 3
Cook them for an additional 1 to 2 minutes until fragrant, and pour in the beef broth making sure to scrape the browned bits at the bottom of the pan. Bring it to a simmer, then put the cooked pork chops back into the skillet, and cover the skillet with the lid.
Step 4
Let it continue to simmer gently for about 5 to 7 minutes or until cooked through and the internal temperature reaches 145°F, then sprinkle the grated cheese on top, and cover the skillet again. Let it continue cooking for about 1 to 2 minutes until the cheese melts. Garnish with freshly chopped parsley, then serve, and enjoy!
