Step 1
In a large mixing bowl, add the egg yolk and milk, then break the yolks, and whisk them together until well combined. Sift over the flour, then keep on whisking them to incorporate, add the vanilla extract, and continue to whisk until combined. In a separate large mixing bowl, add the egg whites, then beat them over medium-high speed until frothy, add the sugar in 3 batches, and beat them well in between each addition until stiff peaks form.

Step 2
Add 1/3 of the meringue to the yolk mixture, then fold them together until well combined, and then transfer everything back to the meringue. Continue folding them together until combined and incorporated, then pour them into a piping bag, and snip off the end. Place a large nonstick pan on a stove over low heat, then add a drop of cooking oil, and spread it around the pan evenly with a kitchen towel.
Step 3
Pipe the batter onto the pan 3 at a time as shown in the video, then add 2 teaspoons of water on the side of the pan, and cover it with the lid. Let them cook over low heat for about 5 minutes, then flip the pancakes, and add 1 teaspoon of water to the side of the pan. Continue cooking them for 5 more minutes, then put them on a serving plate, and serve with syrup and butter. Enjoy!
