Ingredients:

For empanada dough:

  • 3 3/4 cups all-purpose flour
  • 12 tbsp cold butter
  • 12 tbsp sugar
  • 1 1/2 tsp salt

For ground beef stuffing:

  • 2 lbs lean ground beef
  • 2 small bell peppers (chopped)
  • 1 anaheim pepper (chopped)
  • 1 onion (small)
  • 4 garlic cloves (minced)
  • 2 tsp oregano (preferably Mexican oregano)
  • 2 tsp thyme
  • 2 tsp parsley
  • 2 tsp basil
  • 2 tsp paprika
  • 1-2 tsp red pepper (crushed)
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 2 tsp salt
  • melting cheese

Directions:

Step 1:

Ground beef stuffing. Set the pan to medium heat and add a little bit of oil. Once the oil is heated, put the bell and anaheim pepper. Cook for five minutes, then combine the onion. After 2 minutes, add the beef, minced garlic, spices, and salt—cook for 8 minutes. Remove from heat and set aside to cool down.

Step 2:

Empanada dough. In a large bowl, combine the flour, sugar, and salt. Add the cold butter, then thoroughly mix.  Pour 1 1/4 cup of cold water and knead the flour mixture until it no longer sticks to your hand.

Step 3:

Sprinkle some flour on the clean countertop. Grab a little round of dough and roll it until thin. Put the cheese and filling on the dough and fold in half. Secure the ends by pressing gently with your fingers. Then fold and press the edges inward from one end to the other. Place into a baking sheet and repeat the same process for the remaining dough and filling. Refrigerate the empanadas for 1 hour before cooking.

Step 4:

Set the heat to medium. Add the oil to the pan and wait until it’s heated. Fry the empanadas until brown and golden.

Serve with guacamole. Enjoy!
