While browsing the internet for some good recipes I can try for the weekend, I found this pumpkin bread by Rosie Cooks on YouTube. After seeing the thumbnail I already knew that I had to give it a try, but after watching the video tutorial, I was even more convinced, the instructions are very easy to follow and the ingredients were pretty simple and few, too. This is such a convenient recipe for busy days and busy people, too, just like me!

Ingredients:

  • (15 ounces) can of pumpkin puree
  • eggs
  • 1 cup of vegetable oil
  • ¾ cup of water
  • 2 tsp of vanilla extract
  • 2½ cups of sugar
  • 3½ cups of all-purpose flour
  • 2 tsp of baking soda
  • 1½ tsp of salt
  • 2 tbsp of pumpkin pie spice
  • Nonstick cooking spray

Directions:

Step 1

In a large mixing bowl, add the pumpkin puree, eggs, vegetable oil, water, vanilla, and sugar, then beat them together using an electric hand mixer until smooth and combined, and set them aside.

Step 2

In a separate large mixing bowl, add the flour, salt, baking soda, and pumpkin pie spice, then whisk everything together until uniform, and add the flour mixture to the pumpkin mixture.

Step 3

Using an electric hand mixer, beat everything together until the smooth and well-combined batter, then divide the batter into loaf pans greased with a nonstick cooking spray, and make sure to fill each pan halfway to leave enough headspace.

Step 4

Place them in an oven preheated at 350°F, then allow them to bake for about 45 to 60 minutes or until a toothpick inserted at the center comes out clean. Serve and enjoy!
