I love egg recipes whether they are simple or special, they just go well with any dish, and they can make mealtime instantly better! One of my favorite versions of eggs is this one by Laura in the Kitchen on YouTube, this eggs benedict is super easy to prepare and the sauce is so yummy that you just can’t get enough of it. If you want to give it a try, then proceed to read the instructions down below, and watch the video tutorial as well while you’re at it.

Ingredients:

  • 2 English muffins, split
  • 4 eggs
  • 1 tsp of distilled white vinegar
  • 4 slices of Canadian bacon
  • 1 tbsp of unsalted butter

Hollandaise Sauce

  • 2 egg yolks
  • 1/3 cup of unsalted butter, melted
  • 1½ tsp of lemon juice
  • A pinch of cayenne pepper
  • Salt, to taste

Directions:

Step 1

Place a saucepan on a stove over low heat, then fill it with about 1 inch of water, and bring it to a simmer. Place a deep pan on a stove, then fill it halfway with water, add the vinegar, and bring it to a slow boil. Grab a glass bowl that would fit on top of the saucepan, then add the egg yolks and lemon, and continue to whisk for a few minutes or until they are double in size and pale in color. Place the bowl on top of the saucepan, then continue to whisk it around quickly and continuously, and pour in the melted butter gradually while whisking consistently until the sauce thickens. Remove the sauce from the heat, then add the salt and cayenne pepper, and give them a good stir to combine.

Step 2

Break each egg in a small bowl one at a time, then swirl the water around in one direction before dropping the egg in the boiling vinegar water, and allow each egg to cook for about 3 minutes. While the eggs are poaching, toast the muffin on a skillet over medium heat, then brown the bacon on both sides as well, and once the eggs are done cooking, remove them with a slotted spoon before gently dabbing them on a paper towel to absorb the excess water. Assemble the muffin on a plate, then top it with bacon, and place the poached egg on top before drizzling a generous amount of the prepared hollandaise sauce.
