Ingredients:

Lemon Cake (dish sponge cake)

  • 1 cup all-purpose flour
  • ½ cup + 1 tbsp sugar
  • 3 medium eggs
  • 1 stick + 1 tbsp softened butter
  • 3 tbsp lemon juice
  • Zest of 2 lemons
  • A pinch of salt
  • ½ tsp baking powder
  • ¼ tsp vanilla extract
  • Yellow and green gel food coloring

Underwhipped meringue (soap)

  • 1 egg white
  • 2 tbsp sugar
  • ½ tsp lemon juice

Directions:

Step 1

In a large mixing bowl, add the softened butter, lemon zest, and vanilla extract, then give them a good mix and whisk in the egg one at a time. Sift the dry ingredients, then add them to the bowl along with the lemon juice, and mix them all together until well combined and smooth making sure to not overmix. Pour about 1/3 of a cup of the batter into a separate mixing bowl, then add a few drops of food coloring, and mix until uniform and incorporated. Add a few drops of green food coloring to the other batter, then mix until combined and uniform, and then transfer the batter into two 8-inch square cake pans greased and lined with parchment paper.

Step 2

Spread the batter nicely and evenly, then tap them a few times on the surface, and put them in the preheated oven at 160°C or 320°F letting it bake for about 10 to 12 minutes. Take the green cake out of the oven, then let the yellow cake for 5 more minutes or until it passed the toothpick test. Let the cake cool for about 5 minutes, then unmold, spread a light-colored jam on top of the yellow cake, and place the green cake on top pressing it lightly until they adhere together. For a realistic sponge texture, slightly trim the surface of the green cake, then cut the sides of the cake straight, and slice it into 6 rectangle bars. To create the soap, simply whisk together the egg whites, lemon juice, and sugar, then scoop it on top of the cake, serve, and enjoy!
