Do you love eating salads? How about cucumbers? If you answered yes to both questions, these easy cucumber salad recipes are for you! Cucumbers are very refreshing and crunchy – the reasons why a lot of people love them and why they are perfect for salads. These two recipes have different flavors. The first one is creamy and the second is savory.

The first salad combines cabbage, cucumber, red pepper, green onion, and onion. So, there are different textures and tastes that you can get in just one bite. The second recipe only has cucumber, but the dressing is definitely packed with flavors. Slice the cucumber into rounds then place in a bowl. Add some salt and mix well. Set aside for 10 minutes.
Place a pan over heat and add oil. Saute the red onions for 3 minutes, then add the sliced onion. Fry for 4 minutes. Add 1 teaspoon of sugar and mix well.
In a large bowl, add the sliced cabbage filling 1/3 of the space, then the sauteed vegetables on the other 1/3.
Squeeze the liquid out of the cucumber, then add to the same bowl with the cabbage and vegetables.
Add the chopped green onion, thick yogurt, dried tomatoes and herbs, mustard beans, apple cider vinegar, and minced garlic. Mix until well combined.
Add the sauce into the bowl and mix well. Serve and enjoy!

Make the sauce by combining, garlic, honey, olive oil, paprika, dried tomatoes and basil, mustard seeds, and soy sauce. Mix until well combined.
Pour out the excess liquid from the cucumber.
Add the green onion, onion, and cucumber into a clean bowl. Pour the sauce and mix well.
