Almost anything that was fried is guaranteed delicious, from meat to bread, and even veggies could taste absolutely incredible when fried, especially if they are well seasoned! Just like this recipe by Sapori d’Oriente on YouTube, it’s so simple, easy, and quick to prepare.
Step 1
Wash the eggplants well and pat them dry with a paper towel, then cut off each end, and start cutting into about ¼ by ½ inch thick strips. Place the eggplant strips on a large plate, then sprinkle some salt, and toss around a bit to distribute the salt evenly, this will help the eggplants to release more moisture easier. Let them rest for about 15 minutes while preparing the other ingredients. In a large mixing bowl, add the eggs, natural yogurt, paprika, garlic powder, salt, and pepper, then whisk them together until well combined and uniform.

Next, whisk in the flour to the mixture until combined, then add the cheddar cheese before giving it a final whisk until combined. Use some paper towels to dry off the eggplants before covering each strip in flour, then set them aside. Heat up the oil in a large and deep pan on a stove over medium heat, then dip the floured eggplant into the batter making sure to tap the excess before placing it in the hot oil. Fry them until cooked through and the color becomes golden brown. Place the cooked pieces on top of a paper towel, then place another layer on top of it before placing the next batch of fried eggplants. Serve with your favorite dipping sauce and enjoy!
