When it comes to dinner, nothing beats a delicious and hearty crockpot recipe. There are many dishes that you can make at home and you can also choose ones that require only a few simple ingredients or are ready with less effort.

Ingredients for Crockpot Whole Chicken & Vegetables:
- 1 (4 lbs) whole chicken
- 4 tbsp of butter, softened
- Fresh herbs of your choice, finely chopped
- ½ tbsp of ginger paste
- 1 tbsp of garlic paste, or more to taste
- 1 whole lemon, zested and juiced
- 2 tbsp of olive oil
- Salt and pepper, to taste
- 2 large carrots, cut up
- 1 whole onion, cut up
- 2 stalks of celery, cut up
- About 5-6 medium gold or red potatoes, cut up
How to Make Crockpot Whole Chicken & Vegetables:
Step 1
Clean and prepare your chicken, pat it dry, and then separate the skin from the flesh using your hands as demonstrated in the video. In a small bowl, add the softened butter, ginger paste, garlic paste, lemon zest, lemon juice, olive oil, salt, and black pepper, then give everything a good mix until evenly combined, and use it to season the chicken under the skin. Make sure to spread the filling evenly, then use the same seasoning to cover the entire exterior of the chicken, and set it aside.
Step 3
In the crockpot, add the cut veggies and some of the seasoning mix, then give them a good mix to combine, and level out the veggies. Place the whole chicken in the center, then spread the remaining seasoning over the chicken, and put the fresh bay leaves in the crockpot as well. Cover it with the lid, then allow it to cook on a low setting for about 6 hours, discard the leaves, and broil it for 5 more minutes for extra brown color.
