  •  2 pounds of ground beef, browned and drained
  • ½ medium onion, diced
  • 3 potatoes, peeled and diced into 1-inch pieces
  • 16 oz of frozen mixed vegetables
  • 3 (14.5 oz) cans of diced tomatoes
  • 4 cups of beef broth
  • 2 tsp of Italian Seasoning
  • 1 tsp of salt
  • ½ tsp of pepper

Step 1

Place a pan on a stove over medium-high heat, then add the ground beef, and break it apart letting it cook for a few minutes until nicely browned.

Step 2

Drain off all the excess grease, then transfer it to a 6-quart crockpot, and add in the diced onion, potatoes, frozen mixed vegetables, and diced tomatoes.

Step 3

Pour in the beef broth, then season them with Italian seasoning, salt, and pepper, and then cover the crockpot with the lid.

Step 4

Allow the soup to cook on a low setting for about 4 to 6 hours or a high setting for about 2 to 3 hours, then serve hot, and enjoy!
