Ingredients for Crockpot Taco Casserole:
Casserole
- 1 lb of ground beef
- 1 can of black beans, drained and rinsed
- 1 can of corn, drained
- 2 cups of tortilla chips
- 2 cups of shredded cheese, cheddar
- 1 cup of salsa
Seasoning
- 1 tbsp of chili powder
- 1 ½ tsp of ground cumin
- 1 tsp of sea salt
- 1 tsp of ground black pepper
- ½ tsp of smoked paprika
- ¼ tsp of garlic powder
- ¼ tsp of onion powder
- ¼ tsp of red pepper flakes, crushed, optional
- ¼ tsp of dried oregano
Tortilla Chips
- 6 small corn tortillas
- Oil, for frying
- Sea salt, to taste
How to Make Crockpot Taco Casserole:
Step 1
Add all of the seasonings in a small bowl, then mix them until uniform, and set them aside for later. Place a large skillet on a stove over medium heat, then heat it before adding the ground meat, and then break it apart.
Step 2
Cook the meat until nicely browned, then drain off the excess grease, and sprinkle the prepared taco seasoning. Give them a good stir until evenly coated, then cook them for an additional 2 minutes, and transfer the meat mixture to the crockpot.
Step 3
Add the black beans, corn, and salsa, then stir everything until nicely combined, and then cover the crockpot with the lid. Allow the mixture to cook on a low setting for 4 hours, then sprinkle a generous amount of shredded cheese, and serve with the fried or baked tortillas.
