Season the chicken with salt and pepper, then grease your crockpot with nonstick cooking spray, and place the seasoned chicken at the bottom. Put the bell peppers, onion, pineapple, garlic, ginger, and sugar, then in a small bowl whisk the soy sauce and honey, and pour it over the top chicken and veggies. Cover the crockpot with the lid, then set it on low, and cook the chicken for about 4 to 5 hours. In a small bowl, add the cornstarch and water, then stir them until well combined, pour it into the crockpot, and give it a good stir. Continue to cook the chicken for another 30 to 40 minutes or until the sauce has thickened, then garnish with green onions, and serve. Enjoy!
