Place a skillet on a stove over medium-high heat, then add the beef, and break it apart. Give it a good toss, then add the chopped onions, celery, and minced garlic, and continue to toss, and cook them until the beef is browned.

Pour the meat mixture into the slow cooker, then add in the chopped carrots, bell peppers, and potatoes, and season them with salt, black pepper, and cayenne pepper. Add the ground dried parsley, thyme, bouillon cubed, beef stock, whole tomatoes, and tomato paste.
Step 3
Cover the crockpot with the lid, then cook it on a low setting for about 8 hours or more. Ladle the soup in a serving bowl, then top it with shredded cheese, and serve. Enjoy!
